500g chicken breasts or thighs, cubed
2 tablespoons cooking oil
1 onion, finely chopped
2 garlic cloves, minced

2 tablespoons curry powder (mild or hot, depending on your preference)
1 teaspoon paprika
1 can (400ml) coconut milk
1 cup chicken stock
2 medium tomatoes, diced
1 medium potato, peeled and cubed

Method
Heat the oil in a large pan over medium heat. Add the onion and sauté until soft.
